Phil Moratin

Executive Chef

Born in Pensacola, Florida, Chef Phil Moratin spent most of his childhood on the island of Oahu, Hawaii. Developing an early admiration for the diverse cultures and cuisine found throughout the Hawaiian Islands, a passion for food and hospitality was instilled at a young age. 

A military family, Phil and his mother moved from Oahu, to Malibu, Calif. and eventually settled further up north in Tracy, Calif. It was in a high school home economics class Phil’s passion for food intensified and shortly after graduation he attended Le Cordon Bleu in San Francisco. 

Venturing to the Napa Valley, Phil spent time within various establishments including Domaine Chandon, Morimoto, and Bouchon. Within a year with the Thomas Keller Restaurant Group, Phil was promoted to Executive Sous Chef at Ad Hoc where he led the kitchen for seven years. Following his time with TKRG, Phil became Chef de Cuisine at Angele, a French Bistro in downtown Napa. Then taking on a new role with Far Niente Winery, Phil was able to expand upon his love for cooking and revitalized the Far Niente garden program. Now Executive Chef of The Charter Oak, Phil looks to energize the culture of the kitchen while executing incredible, family-style cuisine.

Outside of the restaurant you will find Phil with his wife, Nicole, and son, Logan, adventuring throughout the Napa Valley and beyond.
